Aktivität 107: Brot
You can use the pictures provided or turn this into a research activity. Students could explore a website of a bakery (any bakery will work, but you can also ask them to type into the search "Bäckerei" plus a common German last name such as "Müller" (this one works particularly well because of the historic connection to milling/bread) and look at all the products listed on one of these webpages. Let students categorize bread rolls and bread and find the words that are most common (that should get them to terms such as Graubrot, Laugen and Vollkorn etc). They can then come back and do the exercise in the book or present the website they found and explain to the whole class what kinds of different breads this particular bakery offers. You could also add a vocab guessing question about certain words and ingredients (Roggen, Mohn, etc.).
Consider bringing some bread to class if it is available in your area. It may also be interesting for students to understand that what is sold in the U.S. as bread, may be considered Toastbrot in German, thus bread that will only be eaten if toasted.
Aktivität 108: Chemie im Brot
Ask students before they read what kind of bread from 107 is healthy and which one is not as healthy. Ask also why that is.
This text is difficult, too, and emphasis should be put on retrieving the necessary information. Students should not work with a dictionary and there should be no translation, either individually or in class. Use these difficult texts to get comfortable with not understanding every word while actually understanding the message of an authentic text. Celebrate that students are able to detect the details asked for, without understanding everything. This is a very important skill for the students and cannot be overemphasized by you. Refer them back to reading strategies as well and make sure that they read the questions before turning to the text itself.
